Weekend’s Mouth Watering Deliciousness: Vanilla peach cupcakes with brown sugar cream cheese frosting


 

As I have mentioned before, I am a huge cupcake lover. These little bites of deliciousness are so simple and easy to make, and in the same time amazing!

So I had some leftover peaches that I needed to use, hence the vanilla peach cupcakes, and what is better than a cream cheese frosting? So here is the simple recipe, that can make even the coldest hearts melt.

Vanilla Peach Cupcakes

3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 packet unsalted butter, at room temperature
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla powder
1 1/2 cups yogurt or sour cream
3 large peaches, peeled, cored, and chopped

Sift together the dry ingredients. Cream the butter and sugars together. Add the eggs, one at a time, and then the vanilla. Gently mix in the yogurt. Stir in the dry ingredients and fold in the peach chunks.

Divide the batter evenly among the prepared cupcake liners. Bake for 20- 22 minutes on 175C.

 

Cream cheese frosting

2  packages cream cheese, softened

1 packet (125 g.)  butter, softened

2 cups sifted confectioners’ sugar

1/2 cub brown sugar

1 teaspoon vanilla

Stir the butter and the cream cheese, untill fluffy. Add in the sugar and the vanilla. Leave in the fridge for 10-15 minutes to thicken.
